Our story began with Sparta Taverna, founded in 2004 by Chef and Owner George Gouveris. Built on authentic Greek recipes, fresh ingredients and genuine hospitality, Sparta Taverna became a trusted destination for comforting Greek food served with care. That same passion inspired the creation of Sparta Eats—the modern, fast-casual evolution of Sparta Taverna. Sparta Eats brings our traditional flavors into a fresh and convenient dining experience designed for today’s lifestyle.
What Makes Us Different
We are not a typical restaurant chain. Our restaurants are chef-owned and personally operated. Chef George remains actively involved in the food, recipes, quality and daily experience of every location. We prepare our food with fresh ingredients, time-tested recipes and a genuine love for Greek cooking.
